This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. The coffee is then fermented in sealed bags for 8 hours. The coffee is then pulped and submerged in water for a second fermentation of 24-36 hours. The coffee is then gently washed and transported to raised beds. Coffee is let to dry until it reaches the optimum moisture level.
Lenin Chilcon has a 2-hectare farm located at 1900 MASL in El Diamante village. He grows Yellow and Red Bourbon varieties. Lenin collaborates closely with his family, who also own nearby farms. Together, they manage operations such as picking, processing and drying. Although each of them owns their own plots, Lenin takes the lead in the processing phase after harvest.
Lenin is a quality-driven farmer and takes care of his trees and soil by using organic practices. He then shares these practices with his neighbours.
