This stunning competition coffee begins with the meticulous selection of ripe Java cherries, carefully sorted and disinfected with alcohol. The whole cherries undergo a series of intricate processing steps, including oxidation, fermentation, thermal rinsing, quenching, and precision drying—each step enhancing complexity and refining its flavour profile.

Freshly picked Java cherries are then introduced, pulped together, and fermented for an additional 40 hours, infusing the lot with an extra layer of depth and vibrancy. The duo cherries are then precision dried to an ideal 11% moisture content, completing this exceptional honey-processed coffee.

Here’s a breakdown of the entire process:

  1. Ripe Java cherries are picked and disinfected with alcohol
  2. Oxidation for 24 hours
  3. Anaerobic fermentation for 60 hours in full cherries.
  4. Anaerobic fermentation for further 36 hours in water at 30-32 degrees in Java mossto
  5. Full cherries submerged in 50c water to stop fermentation, and then quenched in cold water
  6. Cherries are pristine precision dried in hermetically sealed tanks to a humidity of 18%
  7. Freshly picked Java cherries are added
  8. All cherries are pulped together and then fermented for a further 40 hours
  9. Fully pristine precision dried to 11.5% moisture

 

This coffee has a special place in our hearts, and an even more special place in Julijan’s heart. Julijan used this coffee as a major component of a blend for his 2025 Australian Brewer’s Cup Championship, placing 4th in Australia!
