This coffee is a Red Bourbon straight from the heart of El Vergel. This coffee is a ‘mossto process’ coffee which is a delightful fusion of innovation and flavour. Bourbon Genius undergoes an extensive 84-hour fermentation in stainless steel tanks with mossto/lixiviates (from a Java fermented coffee). After the fermentation, this coffee goes through a 35-day drying process, with intermittent exposure to the sun. Finally, it involves a mechanical drying station before being rested in grain pro storage for two months.

 

What is mossto/lixiviates?

 

Mossto is a by-product generated during the coffee fermentation process. It is a liquid that contains a microbial population, including bacteria and yeasts. Utilizing this mossto in the fermentation process helps to reduce the fermentation time and enhances the coffee, adding greater complexity to its flavours. This liquid is produced because coffee undergoes dehydration during fermentation, resulting in the generation of this liquid by-product. At the end of a coffees fermentation, this mossto is collected and stored in a refrigerator at 3 degrees for 24 hours. To use the mossto in other fermentation processes, water and sugar are added to the mossto to ensure the mossto keeps growing.
