ABOUT EL VERGEL ROBUSTA

This coffee is a continuation with our wonderful partnership with Forest Coffee, and prehaps the most exciting offering we have had from their El Vergel farm since we offered their Koji coffees to the Australian market. This robusta was first tasted by our team at El Vergel in late 2024.

The journey of this Robusta begins with the meticulous selection of Robusta coffee cherries, known for their bold flavors and rich complexity.
Handpicked at peak ripeness, the cherries undergo an 8-hour pre-fermentation phase on tarps, allowing for controlled oxidation. This initial stage enhances the coffee’s depth, setting the foundation for its intense and layered flavor profile.

Following pre-fermentation, the cherries are transferred to hermetic tanks for a 96-hour anaerobic fermentation. In this oxygen-free environment, the beans develop enhanced sweetness and complexity, with deep chocolate and caramel notes balanced by vibrant tropical fruit nuances. The extended fermentation process refines the Robusta variety, bringing out an exceptional balance between
intensity and smoothness.

Once fermentation is complete, the cherries undergo a meticulous drying process. They are mechanically dried for approximately 140 hours until they reach the ideal moisture content. This slow and controlled drying method ensures consistency, preserving the coffee’s robust character while locking in its rich, full-bodied flavors.

To further enhance its cup profile, Robusta El Vergel undergoes a 30-day stabilization period in GrainPro bags. This critical phase allows the flavors to harmonize and develop, ensuring a smooth and well-rounded tasting experience. The controlled storage environment also protects the beans from external factors, preserving their freshness and quality until they reach the roaster.
