This coffee continues Zest’s fantastic relationship with El Vergel Estate and Shady & Elias Bayter. Our relationship’s first coffee’s were a huge hit with the Special Reserve series highlighting their Koji processing. Now, we are excited to release more of their awesome creations. This lot is a joint collaboration between El Vergel Estate and Freddy Correa from La Primavera farm, where Freddy and the Bayter’s work together to develop innovative processes. This particular lot comes from Freddy’s La Primavera farm and is named Pink Bourbon Creation.
This Pink Borbon lot was developed with two fermentation processes. Firstly, the coffee went through 24 hours of pre-fermentation as whole cherries. This was followed by 36 hours of aerobic fermentation in bags in mucilage. To finish the process, the coffee was dried on raised drying beds under the sun for an average of 15 days.
