This coffee is bang for buck! Selected by the Zest team over Cofinet’s cupping table at origin, this coffee offers an old school traditional anaerobic fermentation profile that we used to see in 2018/19. This is a ‘Ninety Plus’ style coffee, offering you a high quality profile for a fraction of the price.
This coffee was grown by Jairo Arcila at the farm Buenos Aires. This coffee was carefully hand-picked in order to select only the ripest cherries. The coffee was then placed in an aerobic environment for 24 hours before then being placed in Grainpro bags for 200 hours for further fermentation. The whole cherries were then sundried on raised beds until ideal moisture content was achieved.
Jairo Arcila is Carlos and Felipe Arlillas’ (co-founders of Cofinet) dad. He is a third-generation coffee grower, learning from his sons to improve the processing of his coffees in order produce fantastic coffees with amazing flavour profiles such as this lot. This extends Zest’s great partnership with the Arcila family.
