The Thunguri Wet Mill is a part of the Kibirigwi Farmers Cooperative Society (FCS). The Kibirigwi FCS has a further 7 wet mills in Kirinyaga, Kenya. This cooperative has approximately 7000 active members, with the majority being female.
At the Thunguri Wet Mill, the farmers use selective hand picking to pick the ripest cherries. The harvested cherries are pulped at the wet mill the same day they are picked. After pulping, the beans are fermented for 16-18 hours to help in removing the mucilage. The beans are then washed using water from the nearby Kangocho stream and graded, before drying under the sun until a moisture content of between 10.5-11.5% is reached.
